Ingredients

  • 1 c. buttermilk (not sour milk)
  • 2 Tbsp. hot tap water
  • 1/2 c. diced, candied orange rind or 1 c. diced dates
  • 1 c. raisins (optional)
  • 2 c. unbleached flour (sifted before measuring)
  • 1/2 tsp. salt
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • 1/2 tsp. freshly grated nutmeg
  • 1/4 tsp. ground cloves
  • 1/2 c. (1 stick) butter (not margarine)
  • 1 1/4 c. packed brown sugar
  • 2 large eggs

Method

  • Pour buttermilk and hot water over orange rind or dates and raisins if used; let stand while assembling other ingredients. Sift together flour, salt, baking soda and spices.
  • Cream butter and sugar until light and fluffy; add eggs, one at a time, beating well after each addition.
  • Add dry ingredients alternately with buttermilk mixture, beating until smooth after each addition.
  • Turn batter into greased and lightly floured 9 x 9-inch pan.
  • Bake in preheated 350° oven about 45 minutes or until a wooden pick inserted in center comes out clean.
  • Cool slightly; while still warm, spoon Broiled-On Frosting on top.
  • Place under broiler until frosting bubbles and browns lightly.
  • Serves 6.
