Ingredients
- 1 c. sugar
- 2 heaping Tbsp. flour
- 4 eggs, separated
- 2 c. buttermilk
- 1 c. coconut
- 2 tsp. vanilla
Method
- Mix sugar and flour.
- Add egg yolks and buttermilk.
- Mix until smooth.
- Cook over medium heat, stirring often, until stiff. Remove from heat.
- Add coconut and vanilla.
- Stir.
- Pour into baked 10-inch pie shell.
- Top with your favorite meringue (using the leftover egg whites).
- Bake according to your meringue recipe. Cool, then refrigerate.
