Ingredients

  • 1 1/2 sticks margarine
  • 4 eggs (hold back 1 egg white)
  • 4 Tbsp. cream or milk
  • 1 1/4 c. sugar
  • 1/4 tsp. salt
  • 5 tsp. baking powder
  • 2 Tbsp. vanilla or 1 Tbsp. vanilla and 1 Tbsp. brandy
  • rind of 1 orange and juice
  • rind of 1/2 lemon and juice
  • 1/2 c. white raisins
  • 5 c. flour
  • 1/2 c. nuts, chopped fine

Method

  • Melt margarine; set aside.
  • Beat eggs and cream.
  • Add sugar and salt; beat until lemon colored and thick.
  • Add cooled margarine, then baking powder.
  • Add 2 cups of flour.
  • Add orange and lemon rinds and juices, flavorings, nuts, the remaining flour and raisins.
