- 1 lb. firm tomatoes
- 1 c. fresh basil
- 1/3 c. fresh mint
- 1/3 c. fresh parsley
- 6 cloves garlic
- 1 tsp. salt
- 2 1/2 c. olive oil
- 1/2 c. Romano cheese
- 1/2 c. Parmesan cheese
- 1/2 c. Provolone cheese
- 1/2 tsp. crushed red pepper
- 1 medium onion
Method
- Chop and combine all ingredients, including cheese.
- Let marinate overnight or for several hours.
- Serve on toasted Italian bread slices.
