Ingredients

  • 1/3 cups Butter
  • 1/4 cups Granulated Sugar Substitute
  • 1/4 cups Pure Maple Syrup
  • 1 teaspoon Vanilla Extract
  • 1/4 cups Unsweetened Applesauce
  • 1/2 cups Plain Greek Yogurt
  • 2 Eggs, Slightly Beaten
  • 1 cup Whole Wheat Flour
  • 1/2 cups White Whole Wheat Flour
  • 1 teaspoon Baking Powder
  • 1 teaspoon Baking Soda
  • 1/4 teaspoons Salt
  • 1-1/2 teaspoon Cinnamon
  • 1/2 teaspoons Nutmeg
  • 1/2 teaspoons Allspice
  • 1/8 teaspoons Ginger
  • 1/4 cups Water
  • 1 cup Finely Chopped Apples

Method

  • 1. Preheat oven to 350°F. Lightly spray an 8x8 baking dish with nonstick cooking spray.
  • 2. In a small saucepan, melt butter over medium heat, stirring occasionally to prevent scorching. Continue cooking until butter turns light golden brown. Set aside to cool.
  • 3. In the bowl of a stand mixer, beat together sugar substitute, maple syrup, vanilla, applesauce, yogurt, and eggs until creamy. Beat in cooled butter.
  • 4. In a medium bowl, whisk together flours, baking powder, baking soda, salt, cinnamon, nutmeg, allspice, and ginger. Slowly add dry ingredients to wet ingredients. Add water. Beat on low until well-combined.
  • 5. Gently stir in chopped apples.
  • 6. Spread batter into prepared baking dish. Bake for 20-30 minutes or until just starting to turn light golden brown and a toothpick inserted into the center comes out clean.
  • 7. Allow to cool for 10 minutes before cutting. Store leftovers in an airtight container.
