Ingredients

  • 3 oz. boneless skinless chicken breast
  • 2 Tbsp. KRAFT Balsamic Vinaigrette Dressing, divided
  • 1/3 cup instant brown rice, uncooked
  • 1 cup fresh chopped spinach leaves
  • 1/2 cup fresh broccoli florets, chopped
  • 1 carrot, grated
  • 4 large fresh s, sliced
  • 2 Tbsp. chopped green onion
  • 1 Tbsp. KRAFT Lite Ranch Dressing
  • 1 Tbsp. PLANTERS Sunflower Kernels
  • 8 oz. nonfat yogurt, favorite flavor
  • 1 16 fl oz bottle , favorite flavor

Method

  • Brush chicken with 1 tsp.
  • of the vinaigrette.
  • Broil 4 min.
  • on each side, or until cooked through.
  • Cook rice according to package instructions.
  • When done, place in center of serving plate.
  • Toss spinach with remaining vinaigrette and place on top of rice on serving plate.
  • Top with cooked chicken.
  • Toss together broccoli, carrot, mushrooms, onions and ranch dressing.
  • Cover and refrigerate briefly.
  • Sprinkle salad with sunflower kernels just before serving.
  • Enjoy yogurt for dessert.
  • Serve meal with CRYSTAL LIGHT.
