- 3 oz. boneless skinless chicken breast
- 2 Tbsp. KRAFT Balsamic Vinaigrette Dressing, divided
- 1/3 cup instant brown rice, uncooked
- 1 cup fresh chopped spinach leaves
- 1/2 cup fresh broccoli florets, chopped
- 1 carrot, grated
- 4 large fresh s, sliced
- 2 Tbsp. chopped green onion
- 1 Tbsp. KRAFT Lite Ranch Dressing
- 1 Tbsp. PLANTERS Sunflower Kernels
- 8 oz. nonfat yogurt, favorite flavor
- 1 16 fl oz bottle , favorite flavor
Method
- Brush chicken with 1 tsp.
- of the vinaigrette.
- Broil 4 min.
- on each side, or until cooked through.
- Cook rice according to package instructions.
- When done, place in center of serving plate.
- Toss spinach with remaining vinaigrette and place on top of rice on serving plate.
- Top with cooked chicken.
- Toss together broccoli, carrot, mushrooms, onions and ranch dressing.
- Cover and refrigerate briefly.
- Sprinkle salad with sunflower kernels just before serving.
- Enjoy yogurt for dessert.
- Serve meal with CRYSTAL LIGHT.
