Ingredients

  • 1 small onion, chopped
  • 1/2 c. chopped celery
  • 1 pkg. frozen broccoli, chopped
  • 1 Tbsp. margarine
  • 1 jar process cheese spread
  • 1 can cream of mushroom soup, undiluted
  • 1 can evaporated milk
  • 3 c. cooked rice

Method

  • In a large skillet saute onion, celery and broccoli in margarine for 3 minutes.
  • Stir in cheese, soup and milk, stirring until smooth.
  • Place rice in a greased baking dish. Pour cheese-vegetable mix over top of rice.
  • Do not mix or stir.
  • Bake at 325° for 25 to 35 minutes until hot and bubbly.
