Ingredients

  • 3 ribs celery, chopped
  • 1/4 cup minced onion King Sooper's 1 lb For $0.99 thru 02/09
  • 3 carrots, sliced and partially cooked
  • 1/2 cup (1 stick) margarine or butter
  • 1 cup water
  • 1 can (10-3/4 oz.) condensed cream of mushroom soup
  • 1 large bunch broccoli, chopped
  • 1/2 lb. (8 oz.) VELVEETA, cut up
  • 2 cups cooked rice
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 4 cups cooked sliced chicken Whole Foods 1 lb For $3.99 thru 02/09

Method

  • Saute celery, onion and carrots in margarine in large skillet.
  • Add water and mushroom soup.
  • Add chopped broccoli, VELVEETA, rice, salt and pepper.
  • Stir.
  • Layer bottom of 4 qt.
  • casserole dish with chicken.
  • Cover with VELVEETA mixture.
  • Bake in oven at 350F for 20 minutes.
  • Makes 8 to 10 servings.
