Ingredients
- 2 (10 oz.) pkg. broccoli, cooked and drained
- 2 Tbsp. chopped onion
- 1 can cream of mushroom soup
- 2 beaten eggs
- 1 c. mayonnaise
- 1 c. sharp Cheddar cheese, shredded
Method
- Cut the eggplant in thick slices, carefully paring each piece. Throw it in salt and water.
- Let it remain there several hours. Take from the water; drain and wipe, then butter the slices of eggplant, dip in beaten egg, then in grated cracker and fry a light brown.
- Pepper.
- Grate more cracker over them and serve.
