Ingredients

  • 2 (10 oz.) pkg. broccoli, cooked and drained
  • 2 Tbsp. chopped onion
  • 1 can cream of mushroom soup
  • 2 beaten eggs
  • 1 c. mayonnaise
  • 1 c. sharp Cheddar cheese, shredded

Method

  • Cut the eggplant in thick slices, carefully paring each piece. Throw it in salt and water.
  • Let it remain there several hours. Take from the water; drain and wipe, then butter the slices of eggplant, dip in beaten egg, then in grated cracker and fry a light brown.
  • Pepper.
  • Grate more cracker over them and serve.
