Ingredients
- 1 c. cooked rice
- 3/4 stick butter
- 1 medium onion, chopped
- 1 c. Velveeta or mild Cheddar cheese
- 1 (10 oz.) pkg. frozen broccoli or 1 head fresh broccoli
- 1 can cream of mushroom soup
Method
- In small frying pan, melt butter.
- Add onion and broccoli and cook until tender.
- Add rice.
- Stir in soup and cheese.
- Pour into baking dish sprayed with Pam and bake for 30 minutes at 350°. Can be prepared ahead of time and baked just before serving.
