Ingredients

  • 1 bag Success White Rice or Success Brown Rice
  • non-stick cooking spray
  • 1 box (10 oz.) frozen broccoli spears, thawed and drained
  • 1 cup (6 oz.) shredded cheddar cheese, divided
  • 1 can (10-3/4 oz.) condensed cream of mushroom soup
  • 3 Tbsps butter, melted
  • 1/2 cup evaporated milk
  • 1/2 cup water
  • 1 Tbsp. onion, freshly grated Safeway 1 lb For $1.49 thru 02/09
  • 1/2 tsp. salt
  • 1/2 tsp. pepper

Method

  • Preheat oven to 350F.
  • Prepare rice according to package directions.
  • Coat a 2-quart casserole dish with non-stick cooking spray.
  • In a medium bowl combine broccoli, 1/2 cup cheese, soup, butter, evaporated milk, water, onion, salt and pepper.
  • Fold in rice.
  • Pour mixture into prepared dish and top with remaining 1/2 cup cheese.
  • Bake 20 minutes.
