Ingredients

  • 1 c. Cheddar cheese cracker crumbs
  • 4 green onions, chopped
  • 2 Tbsp. butter or margarine, melted
  • 1 c. (4 oz.) shredded Cheddar cheese
  • 1/2 tsp. chicken-flavored bouillon granules
  • 2 Tbsp. taco seasoning mix
  • 8 chicken breast halves, skinned and boned
  • 2 c. half and half cream
  • 1 c. (4 oz.) shredded Monterey Jack cheese
  • 1 (4 oz.) can chopped green chilies, drained
  • vegetable cooking spray

Method

  • Combine cracker crumbs and seasoning mix, stirring well. Dredge chicken in crumb mixture.
  • Place in a 13 x 9 x 2-inch baking pan sprayed with vegetable cooking spray.
  • Saute green onions in butter in a skillet until tender.
  • Stir in cream and remaining ingredients.
  • Pour over chicken.
  • Bake, uncovered, at 350° for 45 minutes.
  • Yields 8 servings.
