Ingredients

  • 12 Eggs
  • 1/2 cup Milk
  • 1 lb ground breakfast sausage or bacon
  • 1 packages diced or shredded frozen potatoes
  • 1/2 tsp salt
  • pinch pepper
  • 1/2 chopped onion
  • 1 tbsp oil
  • 1 1/2 cup Shredded Mild Cheese

Method

  • Saute onion and sausage/diced bacon in a pan with oil for 10 minutes on medium heat
  • While onions are sauteing whisk salt, pepper, milk and eggs in a large bowl until well incorporated.
  • Coat a 9x13 baking or casserole dish spray or coat with oil or cooking spray.
  • Add potatoes to bottom of pan.
  • Add 1/2 of cheese on top of potatoes, followed by meat and onion mixture.
  • Next pour in eggs and top with remaining cheese.
  • Bake uncovered for 30 minutes on 375F.
