Ingredients
- 2 pounds eggplant
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 egg beaten
- 1 cup cracker crumbs
- 3 tablespoons butter
Method
- Pare eggplant and cut into 1/4-inch slices.
- Season with salt and pepper.
- Dip into beaten egg and then into cracker crumbs.
- Place in greased baking pan; dot with butter and bake at 400 degrees for 40 minutes.
