Ingredients

  • 30 med. cucumbers
  • 8 med. onions
  • 2 lg. red or green peppers
  • 1/2 c. salt
  • 5 c. sugar
  • 5 c. vinegar
  • 2 Tbsp. mustard seed
  • 1 tsp. turmeric
  • 1 tsp. whole cloves
  • 2 Tbsp. pickling spice
  • 1/4-1/2 tsp. ground cloves
  • 1/2 tsp. celery seed

Method

  • Slice cucumbers into thin rings.
  • Do not pare.
  • Slice onions into thin rings.
  • Cut peppers in fine strips.
  • Dissolve salt in ice water and pour over sliced vegetables.
  • Let stand 3 hours and then drain.
  • Combine vinegar, sugar, and spices and bring to a boil.
  • Add drained vegetables and heat just to boiling point.
  • Do not boil.
  • Pack into sterilized jars and seal.
