Ingredients

  • 4 qt. sliced medium cucumbers
  • 6 medium onions, sliced
  • 2 green peppers, sliced
  • 1/3 c. pickling salt
  • cracked ice
  • 5 c. sugar
  • 3 c. cider vinegar
  • 2 Tbsp. mustard seed
  • 1 1/2 tsp. celery seed
  • 1 1/2 tsp. ground turmeric

Method

  • Combine cucumbers, onions, green peppers and salt.
  • Cover with crushed ice.
  • Let stand several hours.
  • Drain well.
  • Add remaining ingredients.
  • Pour over cucumbers.
  • Bring to a full boil.
  • Fill hot pint jars with vegetables and liquid, leaving 1/2-inch headspace. Process in boiling water, 5 minutes.
  • Start counting time when water returns to boil.
  • Makes 8 pints.
