Ingredients
- 4 qt. sliced medium cucumbers
- 6 medium onions, sliced
- 2 green peppers, sliced
- 1/3 c. pickling salt
- cracked ice
- 5 c. sugar
- 3 c. cider vinegar
- 2 Tbsp. mustard seed
- 1 1/2 tsp. celery seed
- 1 1/2 tsp. ground turmeric
Method
- Combine cucumbers, onions, green peppers and salt.
- Cover with crushed ice.
- Let stand several hours.
- Drain well.
- Add remaining ingredients.
- Pour over cucumbers.
- Bring to a full boil.
- Fill hot pint jars with vegetables and liquid, leaving 1/2-inch headspace. Process in boiling water, 5 minutes.
- Start counting time when water returns to boil.
- Makes 8 pints.
