Ingredients

  • 1 stick butter or margarine
  • 1 c. brown sugar
  • 1 c. white sugar
  • 3/4 c. oil
  • 4 eggs
  • 2 1/2 c. Bran, soaked in 2 c. milk
  • 1 1/2 tsp. cinnamon
  • 3 1/2 c. flour
  • 4 tsp. baking powder
  • 1 tsp. baking soda
  • 3 Tbsp. wheat germ
  • pinch of salt
  • 1 c. chopped dates or any dry fruit
  • nuts (if desired)

Method

  • Cream butter; add eggs and sugar gradually.
  • Add dry ingredients and chopped dates.
  • Fill muffin cups 3/4 full.
  • Bake 25 to 30 minutes at 350°.
  • Makes 3 to 4 dozen.
  • Believe it or not, I get compliments every time I make these.
