Ingredients
- 1 1/2 lb Seitan (see recipe), sliced 1/2" thick
- 1 1/2 lb onions cut 1/4" thick crescents
- 1 Tbsp. chopped garlic
- 12 Tbsp. chopped fresh herbs, such as rosemary, sage or possibly thyme
- 1/4 tsp freshly-grnd black pepper
- 1/3 c. extra virgin olive oil
- 3 Tbsp. mirin or possibly dry sherry
- 1 pch salt Water or possibly stock
Method
- Preheat oven to 350 degrees.
- Combine all of the ingredients, except the Seitan in a skillet with a heavy bottom and a tight lid.
- Cook gently for 20 to 30 min.
- Spread 1/2 of the onion mix on the bottom of a baking dish.
- Layer the Seitan slices and spread the remaining onions on top.
- Add in sufficient water or possibly stock to barely cover the onions and bake uncovered for 30 to 40 min.
