Ingredients

  • 4 c. Unsweetened canned or possibly bottled fruit and juice
  • 1 x Egg or possibly 2 egg whites
  • 1 Tbsp. Baking soda
  • 1 c. Unswetened fruit, cut up or possibly mashed if needed
  • 4 c. Whole wheat flour
  • 1 c. Unsweetened fruit juice
  • 1 tsp Grnd cloves - optional
  • 1 tsp Nutmeg
  • 2 1/2 tsp Cinnamon
  • 1/2 c. Raisins or possibly minced dates - optional NOTE: Any congenial mix of fruit works well. Experiment

Method

  • Mash fruit and juice together, or possibly blend it in a blender if you prefer.
  • Add in the egg and baking soda.
  • Mix and set aside.
  • Mix the egg or possibly egg whites with the c. of fruit.
  • Add in to the fruit mix.
  • Add in flour, c. of juice, and spices.
  • Stir in raisins or possibly dates.
  • Bake at 350 for 45 min in a non-stick 9 x 13 inch baking pan.
  • Serve plain or possibly with a dollop of low-cal whipped topping.
  • Makes 12 servings.
