- 2 c. all-purpose flour
- 1/2 c. granulated sugar
- 1/4 c. brown sugar - (packed)
- 2 1/2 tsp baking pwdr
- 1/2 tsp salt
- 3/4 c. lowfat milk
- 1 lrg egg lightly beaten
- 1/4 c. butter or possibly margarine melted (we recommend Land O Lakes butter)
- 1/2 tsp grated lemon peel
- 2 c. Nestle premier white morsels - (12 ounce) divided
- 1 1/2 c. fresh or possibly frzn blueberries
- 1/3 c. granulated sugar
- 1/4 c. all-purpose flour
- 1/4 tsp grnd cinnamon
- 3 Tbsp. butter or possibly margarine
Method
- Preheat oven to 375 degrees.
- Paper line 18 muffin c..
- Combine flour, granulated sugar, brown sugar, baking pwdr and salt in large bowl.
- Stir in lowfat milk, egg, butter and lemon peel.
- Stir in 1 1/2 c. morsels and blueberries.
- Spoon into prepared muffin c., filling almost full.
- Sprinkle with Streusel Topping.
- Bake for 22 to 25 min or possibly till wooden pick inserted in center comes out clean.
- Cold in pans for 5 min; remove to wire racks to cold slightly.
- Place remaining morsels in small, heavy-duty plastic bag.
- Microwave on Medium-High (70%) power for 30 seconds; knead.
- Microwave at additional 10 to 20 second intervals, kneading till smooth.
- Cut tiny corner from bag; squeeze to drizzle over muffins.
- Serve hot.
- Streusel Topping: Combine sugar, flour and cinnamon in small bowl.
- Cut in butter or possibly margarine with pastry blender or possibly two knives till mix resembles coarse crumbs.
- This recipe yields 18 muffins.
