Ingredients

  • 2 c. all-purpose flour
  • 1/2 c. granulated sugar
  • 1/4 c. brown sugar - (packed)
  • 2 1/2 tsp baking pwdr
  • 1/2 tsp salt
  • 3/4 c. lowfat milk
  • 1 lrg egg lightly beaten
  • 1/4 c. butter or possibly margarine melted (we recommend Land O Lakes butter)
  • 1/2 tsp grated lemon peel
  • 2 c. Nestle premier white morsels - (12 ounce) divided
  • 1 1/2 c. fresh or possibly frzn blueberries
  • 1/3 c. granulated sugar
  • 1/4 c. all-purpose flour
  • 1/4 tsp grnd cinnamon
  • 3 Tbsp. butter or possibly margarine

Method

  • Preheat oven to 375 degrees.
  • Paper line 18 muffin c..
  • Combine flour, granulated sugar, brown sugar, baking pwdr and salt in large bowl.
  • Stir in lowfat milk, egg, butter and lemon peel.
  • Stir in 1 1/2 c. morsels and blueberries.
  • Spoon into prepared muffin c., filling almost full.
  • Sprinkle with Streusel Topping.
  • Bake for 22 to 25 min or possibly till wooden pick inserted in center comes out clean.
  • Cold in pans for 5 min; remove to wire racks to cold slightly.
  • Place remaining morsels in small, heavy-duty plastic bag.
  • Microwave on Medium-High (70%) power for 30 seconds; knead.
  • Microwave at additional 10 to 20 second intervals, kneading till smooth.
  • Cut tiny corner from bag; squeeze to drizzle over muffins.
  • Serve hot.
  • Streusel Topping: Combine sugar, flour and cinnamon in small bowl.
  • Cut in butter or possibly margarine with pastry blender or possibly two knives till mix resembles coarse crumbs.
  • This recipe yields 18 muffins.
