- 3 tablespoons butter
- 13 cup sugar
- 2 egg yolks
- 23 cup flour
- 1 teaspoon baking powder
- 12 teaspoon cinnamon
- 14 teaspoon salt
- 14 cup milk
- 2 egg whites
- 6 tablespoons sugar
- 14 teaspoon salt
- 12 teaspoon cinnamon
- 1 cup blueberries
Method
- Preheat oven to 350 degrees F.
- Spray an 8" square pan with cooking spray such as pam.
- Cream butter and sugar.
- Beat in egg yolks.
- Mix flour, baking powder, cinnamon and salt.
- Alternately fold milk and dry ingredients into the butter mixture.
- Spread in pan and bake for 18-20 minutes.
- Remove pan from oven and reduce oven heat to 300F.
- Whip egg whites until soft peaks form.
- Add sugar, salt and cinnamon.
- Beat until stiff peaks form.
- Gently fold berries into the egg white mixture.
- Spread over cake in pan and bake until topping is lightly brown about 20-30 minutes.
