Ingredients

  • 3 tablespoons butter
  • 13 cup sugar
  • 2 egg yolks
  • 23 cup flour
  • 1 teaspoon baking powder
  • 12 teaspoon cinnamon
  • 14 teaspoon salt
  • 14 cup milk
  • 2 egg whites
  • 6 tablespoons sugar
  • 14 teaspoon salt
  • 12 teaspoon cinnamon
  • 1 cup blueberries

Method

  • Preheat oven to 350 degrees F.
  • Spray an 8" square pan with cooking spray such as pam.
  • Cream butter and sugar.
  • Beat in egg yolks.
  • Mix flour, baking powder, cinnamon and salt.
  • Alternately fold milk and dry ingredients into the butter mixture.
  • Spread in pan and bake for 18-20 minutes.
  • Remove pan from oven and reduce oven heat to 300F.
  • Whip egg whites until soft peaks form.
  • Add sugar, salt and cinnamon.
  • Beat until stiff peaks form.
  • Gently fold berries into the egg white mixture.
  • Spread over cake in pan and bake until topping is lightly brown about 20-30 minutes.
