Ingredients
- 4 whole Medium Baking Potatoes
- Olive Oil Or Shortening
- 1/2 cups Sour Cream
- 1/4 cups Crumbled Blue Cheese (1 Oz.)
- 1/4 cups Butter Or Margarine
- 3/4 teaspoons Salt
- Fresh Ground Pepper, to taste
- 1/4 cups Milk (you May Not Use It All)
- 4 slices Bacon, crisply cooked and crumbled
Method
- Rub potatoes with olive oil or shortening and prick holes with a fork for steam to escape. Bake at 400 degrees for 1 hour or until tender. Cut a thin lengthwise slice from the top of each potato; scoop out the insides, leaving a thin shell. Mash potatoes until no lumps remain. With an electric mixer, beat in sour cream, blue cheese, butter, salt and pepper. Add milk a little at a time, with a mixer, until the mixture reaches the desired consistency. Spoon the mixture back into the potato shells. Place on a cookie sheet or in a shallow pan and bake at 400 degrees for about 15 minutes or until heated through. Sprinkle with bacon. Enjoy!
