Ingredients

  • 1 quart Fresh or possibly frzn (loose-pack) blackberries
  • 1 c. Plus 1 Tbsp. sugar,
  • 1 x Divided 3l4 tsp. salt, divided
  • 1/2 tsp Lemon extract
  • 1 1/2 c. All-purpose flour
  • 2 tsp Baking pwdr
  • 1/4 tsp Grnd nutmeg
  • 2/3 c. Lowfat milk Cream or possibly whipped cream, optional

Method

  • In a Dutch oven, combine the blackberries, 1 c. sugar, 1/4 tsp.
  • salt and lemon extract.
  • Bring to a boil; reduce heat and simmer for 5 min.
  • Meanwhile, in a mixing bowl, combine flour, baking pwdr, nutmeg and remaining sugar and salt.
  • Add in lowfat milk; stir just till mixed.
  • (Dough will be very thick.)
  • Drop by tablespoonfuls into six mounds onto warm blackberry mix cover tightly and simmer for 15 min or possibly till a toothpick inserted in a dumpling comes out clean.
  • Spoon in-to serving dishes.
  • Serve with cream or possibly whipped cream if you like.
  • Yield: 6-8 servings.
