Ingredients
- 1/4 cups Goat Cheese
- 4 ounces, weight Fresh Blackberries
- 1 pinch Salt And Pepper, to taste
- 10 slices Your Favorite Sandwich Bread (I Used A Large Italian Loaf)
- 3 Tablespoons Butter, Softened
- 10 whole Fresh Basil Leaves
- 10 slices Fresh Mozzarella
- 1 pinch Fresh Ground Black Pepper To Taste
Method
- For the blackberry goat cheese:
- 1.
- Blend all ingredients together in a blender or small food processor.
- Set aside.
- For the sandwiches:
- 1.
- Spread one side of each piece of bread with a little bit of soft butter.
- Place half of the bread slices butter-side down on a skillet (I like cast iron) and spread a layer of blackberry goat cheese on the non-butter sides.

- Place 2 leaves of basil on top of the goat cheese and follow with a layer of mozzarella (I use 1 or 2 slices per sandwich).
- Place remaining bread on top of sandwiches, butter side up.
- Turn the skillet on medium-high heat.
- I like to start with a cold skillet because it gives the cheese more time to melt as the skillet heats up, and the butter will still help the bread get crispy.
- This method ensures a crispy sandwich with super oozy, melty cheese!

- Cook sandwiches 3-4 minutes on each side or until bread has lightly browned and cheese has melted.
- Serve immediately.
