Ingredients

  • 1/4 cups Goat Cheese
  • 4 ounces, weight Fresh Blackberries
  • 1 pinch Salt And Pepper, to taste
  • 10 slices Your Favorite Sandwich Bread (I Used A Large Italian Loaf)
  • 3 Tablespoons Butter, Softened
  • 10 whole Fresh Basil Leaves
  • 10 slices Fresh Mozzarella
  • 1 pinch Fresh Ground Black Pepper To Taste

Method

  • For the blackberry goat cheese:

  • Blend all ingredients together in a blender or small food processor.
  • Set aside.
  • For the sandwiches:
  • 1.
  • Spread one side of each piece of bread with a little bit of soft butter.
  • Place half of the bread slices butter-side down on a skillet (I like cast iron) and spread a layer of blackberry goat cheese on the non-butter sides.
  • 2.
  • Place 2 leaves of basil on top of the goat cheese and follow with a layer of mozzarella (I use 1 or 2 slices per sandwich).
  • Place remaining bread on top of sandwiches, butter side up.
  • Turn the skillet on medium-high heat.
  • I like to start with a cold skillet because it gives the cheese more time to melt as the skillet heats up, and the butter will still help the bread get crispy.
  • This method ensures a crispy sandwich with super oozy, melty cheese!

  • Cook sandwiches 3-4 minutes on each side or until bread has lightly browned and cheese has melted.
  • Serve immediately.
