- 1 (15 oz.) can black beans, drained
- 1 (10 oz.) can Niblets corn, drained
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1/2 purple onion, chopped
- 1 to 2 jalapenos, chopped
- 1/3 c. lime juice
- 1/3 c. olive oil
- 1/3 c. cilantro (optional)
- 1 tsp. salt
- 1/2 tsp. lemon pepper
- 1/2 tsp. red pepper
- 1/2 tsp. cumin
Method
- Combine all ingredients and refrigerate. Serve with tortilla chips or on fajitas as a salsa. May also be served over lettuce as a Mexican salad.
