Ingredients

  • 1 (15 oz.) can black beans, drained
  • 1 (10 oz.) can Niblets corn, drained
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1/2 purple onion, chopped
  • 1 to 2 jalapenos, chopped
  • 1/3 c. lime juice
  • 1/3 c. olive oil
  • 1/3 c. cilantro (optional)
  • 1 tsp. salt
  • 1/2 tsp. lemon pepper
  • 1/2 tsp. red pepper
  • 1/2 tsp. cumin

Method

  • Combine all ingredients and refrigerate. Serve with tortilla chips or on fajitas as a salsa. May also be served over lettuce as a Mexican salad.
