- 3 (15 oz.) cans black beans, drained
- 1 (10 oz.) pkg. frozen corn, drained
- 1/3 c. red wine vinegar
- 1/3 c. olive oil
- 3/4 tsp. salt
- 1/2 tsp. pepper
- 3 cloves garlic
- 1 large red pepper
- 1 medium green pepper
- 1 purple onion
Method
- Drain beans in colander. Defrost corn. Add the two together along with red and green peppers and onion. Set aside for 30 minutes.
