Ingredients

  • 1 x (15-oz) (425 g) can black beans, rinsed and well liquid removed
  • 1 1/2 c. (225 g) cooked fresh corn, cut from 3 ears of corn
  • 3 x scallions, white part and 1 inch (2.5 cm) green, minced
  • 1/3 x to 1/2 c. (48 to 56 g) cilantro leaves, chopped
  • 2 Tbsp. (30 ml) extra virgin olive oil
  • 2 Tbsp. (30 ml) fresh lemon juice
  • 1/2 tsp (2.5 ml) salt (optional) freshly grnd pepper to taste

Method

  • Combine the beans and corn in a serving bowl.
  • Stir in scallions and cilantro, starting with 1/3 c. (48 g) and adding more to taste Drizzle mix with extra virgin olive oil and lemon juice.
  • Stir well.
  • Add in salt (if using) and pepper.
  • Cover and chill till ready to use.
