Ingredients
- 1 x (15-oz) (425 g) can black beans, rinsed and well liquid removed
- 1 1/2 c. (225 g) cooked fresh corn, cut from 3 ears of corn
- 3 x scallions, white part and 1 inch (2.5 cm) green, minced
- 1/3 x to 1/2 c. (48 to 56 g) cilantro leaves, chopped
- 2 Tbsp. (30 ml) extra virgin olive oil
- 2 Tbsp. (30 ml) fresh lemon juice
- 1/2 tsp (2.5 ml) salt (optional) freshly grnd pepper to taste
Method
- Combine the beans and corn in a serving bowl.
- Stir in scallions and cilantro, starting with 1/3 c. (48 g) and adding more to taste Drizzle mix with extra virgin olive oil and lemon juice.
- Stir well.
- Add in salt (if using) and pepper.
- Cover and chill till ready to use.
