- 1 pound dry black beans
- 1 tbsp. extra virgin olive oil
- 2 cloves garlic, chopped
- 3 onions, minced
- 3 celery stalks, minced
- 2 c. chicken stock
- 1/2 teaspoon salt
- 1 teaspoon pepper sauce
- 1 teaspoon lemon juice
Method
- Soak beans overnight.
- Place beans and soaking water in large pot, adding additional water to cover.
- Broil gently till beans are tender, about 3 hrs.
- In a skillet saute/fry the onions and garlic in extra virgin olive oil for 1 minute.
- Add in celery and saute/fry for an additional 2 min.
- Pour contents of skillet into the simmering beans along with stock and remaining ingredients.
- Simmer for 1-2 hrs, covered.
- Serve garnished with either grated onions or possibly a dollop of yogurt.
- 8 servings.
