Ingredients

  • 1 pound dry black beans
  • 1 tbsp. extra virgin olive oil
  • 2 cloves garlic, chopped
  • 3 onions, minced
  • 3 celery stalks, minced
  • 2 c. chicken stock
  • 1/2 teaspoon salt
  • 1 teaspoon pepper sauce
  • 1 teaspoon lemon juice

Method

  • Soak beans overnight.
  • Place beans and soaking water in large pot, adding additional water to cover.
  • Broil gently till beans are tender, about 3 hrs.
  • In a skillet saute/fry the onions and garlic in extra virgin olive oil for 1 minute.
  • Add in celery and saute/fry for an additional 2 min.
  • Pour contents of skillet into the simmering beans along with stock and remaining ingredients.
  • Simmer for 1-2 hrs, covered.
  • Serve garnished with either grated onions or possibly a dollop of yogurt.
  • 8 servings.
