Ingredients

  • 1 cup butter flavor shortening
  • 1 cup brown sugar, firmly packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 12 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 14 teaspoon baking soda
  • 2 cups old fashioned oats
  • 1 cup unsalted sunflower seeds, roasted
  • 13 cup sesame seeds, lightly toasted
  • 12 cup fancy sweetened coconut
  • 1 cup golden raisin

Method

  • Heat oven to 350 degrees F
  • In the bowl of an electric mixer combine shortening and sugar.
  • Beat at medium speed until well blended.
  • Beat in eggs and vanilla.
  • In a medium bowl combine flour, salt, baking powder, cinnamon and baking soda.
  • Mix into creamed mixture at low speed until blended.
  • Stir in oats, sunflower seeds, sesame seeds, coconut and raisins with spoon.
  • Drop rounded tablespoonfuls of dough 2 inches apart onto ungreased baking sheets lined with parchment, and flatten with fork -- 6 to a sheet, these expand and are large.
  • Bake for 10 to 13 minutes, or until lightly browned.
  • Remove immediately to cooling rack.
