Ingredients

  • 2 whl cucumbers English peeled and sliced
  • 2 whl tomatoes cut in 1/2
  • 4 whl scallions thinly sliced Greek olives kalamata pitted and sliced original called for 8 feta cheese crumbled original called for 1/3 c.
  • 2 Tbsp. red wine vinegar
  • 2 Tbsp. lemon juice
  • 3 Tbsp. extra virgin extra virgin olive oil
  • 2 tsp oregano salt and pepper
  • 10 x romaine lettuce leaves torn in bite-size pcs Lemon Wedges garnish

Method

  • In a serving bowl, mix together cucumbers, tomatoes, scallions, olives, and feta cheese.
  • In a small bowl whisk together vinegar, lemon juice, extra virgin olive oil, oregano and salt and white pepper to taste.
  • Pour over vegetables in salad bowl and toss till vegetables are well coated.
  • I like to make it to this point and let it sit for awhile.
  • Then add in the Romaine right before serving.
