Ingredients

  • 3 lb. zucchini squash
  • 1/4 lb. Velveeta cheese
  • 1 small bunch scallions (green onions)

Method

  • Wash zucchini and cut in 1-inch slices.
  • Put in a large pot and cover with water.
  • Bring to a boil and let boil for 5 minutes only.
  • Drain squash very well.
  • Cut scallions into very small pieces (use the green and white part).
  • Put the squash into a long baking dish, sprinkle scallions on top of squash.
  • Salt and pepper to taste.
  • Slice cheese and place on top.
  • Bake in 350° oven until cheese is melted, about 15 to 25 minutes.
