Ingredients
- 3 lb. zucchini squash
- 1/4 lb. Velveeta cheese
- 1 small bunch scallions (green onions)
Method
- Wash zucchini and cut in 1-inch slices.
- Put in a large pot and cover with water.
- Bring to a boil and let boil for 5 minutes only.
- Drain squash very well.
- Cut scallions into very small pieces (use the green and white part).
- Put the squash into a long baking dish, sprinkle scallions on top of squash.
- Salt and pepper to taste.
- Slice cheese and place on top.
- Bake in 350° oven until cheese is melted, about 15 to 25 minutes.
