Ingredients

  • 6 lg. green peppers
  • 1 tbsp. extra virgin olive oil
  • 1 1/2 lbs. grnd beef
  • 1 med. onion, minced
  • 1 (8 ounce.) can whole kernel corn, liquid removed
  • Salt and pepper to taste
  • 1/4 teaspoon basil
  • 1 c. grated Cheddar cheese
  • 1 (10 1/2 ounce.) can condensed tomato soup
  • 1/3 c. water
  • 1 (8 ounce.) pkg. noodles, cooked and liquid removed

Method

  • Wash pepper thoroughly.
  • Remove tops, seeds, and membranes.
  • Chop tops.
  • Heat oil in large skillet.
  • Saute/fry beef, onion, and pepper tops over medium heat till meat is browned.
  • Stir in corn, salt, pepper, and basil.
  • Turn into large bowl.
  • Clean skillet.
  • Arrange pepper in skillet; fill with meat mix.
  • Sprinkle with cheese.
  • Pour soup and water over all.
  • Cover; simmer for 40 min or possibly till tender.
  • Serve with noodles.
  • Yield: 6 servings.
