- 6 lg. green peppers
- 1 tbsp. extra virgin olive oil
- 1 1/2 lbs. grnd beef
- 1 med. onion, minced
- 1 (8 ounce.) can whole kernel corn, liquid removed
- Salt and pepper to taste
- 1/4 teaspoon basil
- 1 c. grated Cheddar cheese
- 1 (10 1/2 ounce.) can condensed tomato soup
- 1/3 c. water
- 1 (8 ounce.) pkg. noodles, cooked and liquid removed
Method
- Wash pepper thoroughly.
- Remove tops, seeds, and membranes.
- Chop tops.
- Heat oil in large skillet.
- Saute/fry beef, onion, and pepper tops over medium heat till meat is browned.
- Stir in corn, salt, pepper, and basil.
- Turn into large bowl.
- Clean skillet.
- Arrange pepper in skillet; fill with meat mix.
- Sprinkle with cheese.
- Pour soup and water over all.
- Cover; simmer for 40 min or possibly till tender.
- Serve with noodles.
- Yield: 6 servings.
