Ingredients

  • 4 None raw beets, trimmed, washed
  • 1/4 cup white balsamic vinegar
  • 1/2 cup walnuts, toasted, chopped
  • 1/3 cup Parmesan cheese, shaved
  • 1/3 cup fresh flat-leaf parsley leaves, roughly chopped

Method

  • Preheat oven to 350°F. Place beets in a roasting pan and season. Cover with foil and bake for 45 mins, or until tender. When cool enough to handle, peel and slice.
  • Arrange beet slices on a serving platter. Drizzle with balsamic vinegar and season. Top with walnuts, shaved Parmesan and parsley.
