- 2 quarts beef stock or 2 quarts broth
- 1 cup diced carrot
- 1 cup diced celery
- 1 cup diced onion
- 1 teaspoon olive oil
- 2 tablespoons minced garlic
- 2 cups cooked pearl barley
- 1 teaspoon oregano
- 1 teaspoon basil
- 2 bay leaves
- 12 teaspoon black pepper
- salt, optional (to taste)
- 1 lb beef, already cooked (ground, shredded or chopped)
- 2 (16 ounce) cans crushed tomatoes or 1 quart tomato juice
Method
- In stock pot or favorite soup pot add all ingredients (except barley).
- Bring to a boil, reduce and simmer 45 minutes.
- Add barley and simmer another 15 minutes.
