Ingredients

  • 2 quarts beef stock or 2 quarts broth
  • 1 cup diced carrot
  • 1 cup diced celery
  • 1 cup diced onion
  • 1 teaspoon olive oil
  • 2 tablespoons minced garlic
  • 2 cups cooked pearl barley
  • 1 teaspoon oregano
  • 1 teaspoon basil
  • 2 bay leaves
  • 12 teaspoon black pepper
  • salt, optional (to taste)
  • 1 lb beef, already cooked (ground, shredded or chopped)
  • 2 (16 ounce) cans crushed tomatoes or 1 quart tomato juice

Method

  • In stock pot or favorite soup pot add all ingredients (except barley).
  • Bring to a boil, reduce and simmer 45 minutes.
  • Add barley and simmer another 15 minutes.
