Ingredients

  • 1 cup pinto beans cooked
  • 1 tablespoon hot sauce
  • 1/4 cup frozen corn kernels
  • 3 tablespoons onion diced
  • 1 tomato diced
  • 3 tablespoons coriander minced
  • 2 sandwich buns
  • 100 grams mozzarella cheese grated
  • 1/2 avocado

Method

  • Grease a skillet with cooking spray and heat on medium heat. Add the onions and stir until they are transparent.
  • Add the tomato, hot sauce, and corn kernels. Cook while stirring for 2 minutes.
  • Add the pinto beans and cook for 2 more minutes. Add the coriander and turn off the stove.
  • Cut open the sandwich buns, spread the beans, add an avocado slice on top and mozzarella cheese. Close the sandwich.
  • Grill the sandwich until the cheese melts, let it cool off completely, and serve.
