Ingredients

  • 1 frying chicken, cut up
  • 1/2 c. buttermilk
  • 1 stick butter
  • 1 c. flour
  • 2 tsp. salt
  • 1/4 tsp. pepper
  • 2 tsp. paprika
  • 1/4 tsp. leaf thyme
  • 2 Tbsp. dried minced onion

Method

  • Dip chicken pieces into buttermilk and then into a mixture of flour, salt, pepper, paprika, thyme and minced onion.
  • Melt butter in shallow baking pan in 400° oven.
  • Remove pan and place chicken in pan, turning to coat with butter.
  • Bake in single layer, skin side down, for 30 minutes.
  • Turn and bake 30 more minutes.
