Ingredients

  • 1 tablespoon oil
  • 1 large onion, sliced
  • 1 clove garlic, crushed
  • 1 cup finely sliced celery
  • 1 teaspoon cumin
  • ½ teaspoon paprika
  • 425 g can tomatoes, chopped
  • 440 g can kidney beans
  • 3 tablespoons tomato paste
  • 1½ cups peeled and finely diced pumpkin
  • 430 g can Sanitarium Vegetarian Sausages
  • 2 tablespoons chopped parsley

Method

1. Heat oil in saucepan. Stir-fry onion, garlic and celery until soft.

2. Add spices and stir-fry further 30 seconds.

3. Add tomatoes, kidney beans, tomato paste and pumpkin. Cover and simmer for 15 minutes.

4. Add sliced Sausages and parsley. Heat.
