Ingredients

  • 1/4 cup chopped uncooked bacon (about 1 1/2 slices)
  • 1/4 cup minced white onion
  • 1/4 cup minced red bell pepper
  • 1/4 cup minced yellow bell pepper
  • 1/4 cup minced pasilla or poblano pepper
  • 1 tablespoon minced garlic
  • 1 1/2 cups commercial barbecue sauce
  • 1/4 cup lightly packed fresh cilantro, chopped
  • 1 teaspoon fresh lemon juice

Method

  • Cook bacon in a heavy saucepan until crisp; drain. Add onion, peppers, and garlic. Cover and cook over medium heat for 8 minutes. Stir in barbecue sauce. Bring mixture to a boil. Cool completely; stir in cilantro and lemon juice.
