Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 egg, beaten
  • 3/4 cup milk
  • 1 (3 1/2- to 4-pound) broiler-flyer, cut up
  • Vegetable oil

Method

  • Combine first 6 ingredients; mix well. Dip chicken pieces into batter.
  • Heat 1 inch of oil in a large skillet to 375°; add chicken, and brown quickly on all sides. Reduce heat; cover, and fry 25 minutes or until chicken is tender and golden brown, turning occasionally. Drain well on paper towels.
