Ingredients

  • 2 c. fresh basil leaves, packed
  • 1/2 c. freshly grated Parmesan cheese
  • 1/2 c. extra virgin olive oil
  • 1/3 c. pine nuts or walnuts
  • 3 medium sized garlic cloves, minced
  • salt and pepper to taste

Method

  • Combine the basil leaves in with the nuts in a food processor. Pulse a few times to blend. (If using walnuts, pulse them first before adding basil.)
  • Add the garlic and pulse a few more times.
  • Slowly add the olive oil in a steady stream with the processor is running. Stop and scrape down sides as necessary.
  • Add the grated cheese and pulse until blended. Add salt and pepper to taste.
