Ingredients
- 2 c. fresh basil leaves, packed
- 1/2 c. freshly grated Parmesan cheese
- 1/2 c. extra virgin olive oil
- 1/3 c. pine nuts or walnuts
- 3 medium sized garlic cloves, minced
- salt and pepper to taste
Method
- Combine the basil leaves in with the nuts in a food processor. Pulse a few times to blend. (If using walnuts, pulse them first before adding basil.)
- Add the garlic and pulse a few more times.
- Slowly add the olive oil in a steady stream with the processor is running. Stop and scrape down sides as necessary.
- Add the grated cheese and pulse until blended. Add salt and pepper to taste.
