- 6 lbs. tomatoes, peeled and quartered
- 2 to 3 med. onions, minced
- 1 clove garlic, chopped
- 1/2 c. extra virgin olive oil
- 1/2 c. parsley, minced
- 2 teaspoon paprika
- 3/4 teaspoon rosemary
- 1 green pepper, seeded and minced
- 2 stalks celery, cut in pcs
- 1 bay leaf
- 1 teaspoon salt
- 3/4 teaspoon pepper
- 1 tbsp. oregano
- 3/4 c. water
Method
- Saute/fry onions and garlic in extra virgin olive oil till tender.
- Combine seasoning and parsley with tomatoes and green peppers.
- Add in to onion mix.
- Add in water and simmer till thick, 1 1/2 to 2 hrs.
- Cold and pour into freezer containers, leaving 1/2 inch head space.
- Makes 5 pints.
- This basic recipe can be used for spaghetti, chili, stews, soup and lasagna.
