Ingredients

  • 1 (2 1/2 lb.) pork tenderloin
  • 1/2 c. flour
  • 2 Tbsp. shortening
  • 1/4 c. vinegar
  • 1/2 tsp. salt
  • 1/2 tsp. dry mustard
  • 1/2 tsp. paprika
  • 1/4 tsp. pepper
  • 2 tsp. celery seed
  • 2 Tbsp. sugar
  • 1 Tbsp. chili sauce
  • 1/2 c. catsup

Method

  • Cut tenderloin into 8 slices and dredge with flour.
  • Cook in the shortening in a skillet until brown.
  • Combine remaining ingredients and pour over the pork.
  • Cover.
  • Bake at 350° for 1 1/2 hours, turning pork occasionally.
