Ingredients
- 1 1/2 lb Potatoes (about 4 medium) cut in half
- 3 slc Bacon cut in 1" pcs
- 1/2 c. Onion minced
- 1 Tbsp. All Purpose Flour
- 1 Tbsp. Sugar
- 1/2 tsp Salt
- 1/4 tsp Celery Seed
- 1/4 tsp Pepper
- 1/2 c. Water
- 1/4 c. Vinegar
Method
- Heat, sufficient water in a pan to cover potatoes, to boiling.
- Salt may be added to water if you like.
- Add in potatoes.
- Cover and heat to boiling; reduce heat.
- Boil 20-25 min or possibly till potatoes are tender; drain.
- Cook bacon in skillet till crisp.
- Drain bacon, reserving fat in skillet.
- Cook and stir onion in fat till tender.
- Stir in flour, sugar, salt, celery seed, and pepper.
- Cook over low heat, stirring constantly, till mix is bubbly; remove from heat.
- Stir in water and vinegar.
- Heat to boiling, stirring constantly.
- Boil and stir 1 minute; remove from heat.
- Cut hot potatoes into 1/4 inch slices.
- Stir potatoes and bacon into warm mix.
- Heat till warm and bubbly to coat potato slices.
- May be served warm or possibly refrigerated for a couple of hrs or possibly so and served cool.
