- 6-7 pound brisket, well trimmed
- Onion salt
- Garlic salt
- Celery salt
- Lemon pepper
- Liquid smoke
- Salt
- Pepper
- Worcestershire sauce
- Bar-b-que sauce
Method
- Generously coat brisket with first four seasonings.
- Shake 3 ounces of liquid smoke on top.
- Cover and chill overnight.
- Next day, season with salt and pepper and 1/2 c. Worcestershire sauce.
- Securely seal brisket in foil and cook for 7 hrs on 275 degrees.
- Drain off liquid and cover brisket with bottle of barb-b-que sauce.
- Leave uncovered and cook one more hour.
