Ingredients

  • 6-7 pound brisket, well trimmed
  • Onion salt
  • Garlic salt
  • Celery salt
  • Lemon pepper
  • Liquid smoke
  • Salt
  • Pepper
  • Worcestershire sauce
  • Bar-b-que sauce

Method

  • Generously coat brisket with first four seasonings.
  • Shake 3 ounces of liquid smoke on top.
  • Cover and chill overnight.
  • Next day, season with salt and pepper and 1/2 c. Worcestershire sauce.
  • Securely seal brisket in foil and cook for 7 hrs on 275 degrees.
  • Drain off liquid and cover brisket with bottle of barb-b-que sauce.
  • Leave uncovered and cook one more hour.
