Ingredients

  • 1 1/2 sticks butter or margarine, melted
  • 2 c. vanilla wafer crumbs
  • 2 c. powdered sugar
  • 1 1/2 sticks soft margarine
  • 2 eggs
  • 1 tsp. vanilla
  • 5 to 6 bananas
  • 2 Tbsp. lemon juice
  • 1 (15 1/4 oz.) can crushed pineapple
  • 1 large carton Cool Whip
  • 1/4 c. nuts, chopped
  • maraschino cherries

Method

  • Blend 1 1/2 sticks melted margarine and vanilla wafer crumbs. Press into a 9 x 13-inch pan.
  • Mix powdered sugar, 1 1/2 sticks soft margarine, eggs and vanilla.
  • Beat 5 minutes, then pour on crust.
  • Split bananas lengthwise.
  • Roll them in lemon juice to preserve the color.
  • Lay slices on top of cream mixture.
  • Drain pineapple and spread over bananas.
  • Beat the Cool Whip and spread over top.
  • Sprinkle cake with chopped nuts.
  • Place a cherry in the middle of each anticipated serving.
  • Refrigerate at least an hour before serving.
