Ingredients
- 1 1/2 c. plain flour
- 3/4 tsp. soda
- 1/4 tsp. salt
- 1 c. sugar
- 2 eggs, slightly beaten
- 3/4 c. oil
- 3 Tbsp. buttermilk
- 2 to 3 bananas, mashed
- 1/2 c. chopped pecans
Method
- Preheat oven to 325°.
- Grease and flour an 8 1/2 x 4 1/2 x 2 1/2-inch loaf pan; set aside.
- Sift together flour, soda and salt. Add sugar, eggs, oil and buttermilk.
- Stir to blend.
- Fold in bananas and nuts.
- Pour into prepared dish.
- Bake 1 hour and 10 minutes.
- Let cool in pan for 15 minutes.
