- 1/2 cup Flour - Teff or white flour
- 1/2 cup whole wheat flour or coconut flour
- 1/3 cup brown sugar
- 1 tablespoon Baking powder
- 1 cup buttermilk
- 2 tablespoon chia seeds
- 1/2 cup peanut butter
- 1 banana
- 1 egg
- 2 tablespoon vegetable oil
- 1 teaspoon vanilla
Method
- Combine dry ingredients
- soak chia seeds in buttermilk
- add wet ingredients to dry
- add to muffin tray
- bake 20 mins at 350 degrees
