Ingredients

  • FOR THE MUFFINS:
  • 1-1/2 cup Flour
  • 1 teaspoon Baking Soda
  • 1 teaspoon Baking Powder
  • 1 teaspoon Ground Cinnamon
  • 1/2 teaspoons Salt
  • 3 whole Ripe Bananas, Peeled And Mashed
  • 3/4 cups Brown Sugar
  • 1 whole Egg
  • 1/3 cups Butter, Melted
  • 1 teaspoon Vanilla
  • FOR THE TOPPING:
  • 1/2 cups Brown Sugar
  • 1/8 cups Flour
  • 1/2 teaspoons Ground Cinnamon
  • 1 Tablespoon Butter

Method

  • Preheat oven to 375 F. Spray a 12 count muffin pan with non-stick baking spray or line with cupcake papers.
  • In a mixing bowl, whisk together flour, baking soda, baking powder, ground cinnamon and salt. Set aside.
  • In another larger mixing bowl, beat bananas and brown sugar. Add in egg, butter and vanilla. Mix until combined well. Add the dry ingredients slowly and beat until combined.
  • Pour batter into the prepared muffin pan, filling each well about 3/4 full.
  • Prepare topping by putting the dry ingredients into a medium bowl. Then cut the butter into the dry ingredients until crumbly. Sprinkle on top of the batter.
  • Bake for 20 minutes or until a knife inserted in the center of one comes out clean.
