Ingredients

  • 1 stick Unsalted Butter, At Room Temperature
  • 1/2 cups Granulated Sugar
  • 1/2 cups Dark Brown Sugar
  • 2 whole Eggs
  • 3 whole Ripe Bananas
  • 1 Tablespoon Whole Milk
  • 1 teaspoon Ground Cinnamon
  • 2 cups Flour
  • 1 teaspoon Baking Powder
  • 1 teaspoon Baking Soda
  • 1 teaspoon Salt

Method

  • Preheat oven to 325°F. Butter a loaf pan.
  • Cream together the butter and both sugars in a stand mixer until light and fluffy. Add one egg at a time, incorporating fully before adding the second.
  • Peel bananas, put in a medium bowl and mash with a fork. Add milk and cinnamon and mix together. In a separate bowl, whisk together flour, baking powder, baking soda and salt. Set aside.
  • Add banana mixture to the sugar and butter and mix until combined. Add dry ingredients in 2 batches, incorporating fully before adding in the second batch. Mix until flour disappears and you have a smooth batter.
  • Pour batter into a greased loaf pan. Bake for 1 hour or until an inserted toothpick comes out clean. Let cool on wire rack for 15 minutes then remove bread from pan. Slice and serve!
