Ingredients

  • 1 c. sugar
  • 2 eggs
  • 1/2 stick unsalted butter
  • 2 to 3 very ripe bananas
  • 1/3 c. water
  • 1 2/3 c. flour
  • 1 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • raisins and/or chocolate chips (optional)

Method

  • Heat oven to 350°.
  • Use 9 x 5 x 3-inch loaf pan.
  • Mix sugar, eggs and butter until very smooth.
  • Add bananas, cut in slices and mix again.
  • Blend in rest of ingredients.
  • If desired, add raisins or chocolate chips at the end.
  • Pour into pan.
  • Bake for 1 hour. Let cool completely before slicing.
